Peter dreaming coffee, then beer he'd find.
Zero-emissions class changed his whole course,

Muslim woman entering beer's domain.

Before Peter Burbridge even started his Dalhousie MBA in 2007, he knew he'd launch his own coffee roastery. But career paths shift, and his focus changed from brown beans to sustainable suds after a class on zero-emissions brewing. Peter, a homebrewer and supporter of sustainable business, was hooked on the idea of using a brewery's waste streams to make new products.

Meanwhile, Rozina Darvesh—who grew up on the same Duncan Street as Peter—sat with someone close, poured her favorite small-batch beer, and shared her plan to open a brewery.
"Are you even allowed to do this?" She was asked this because she's Muslim, and in Islam, alcohol is considered taboo. But how she became co-owner of a brewery in Nova Scotia is shaped by so much more than faith.

Her Fredericton-born mom is half-Czech and half-Irish. Her Czech grandfather's family were prominent owners of a flour mill and pudding factory outside of Prague, throwing epic parties where martinis and beer would flow. Her father was born in Bukoba, Tanzania, in an Ismaili Muslim Gujarati family—shop owners who celebrated with chai and samosas instead. Born in New Brunswick in 1983, Rozina grew up between two worlds of celebration.

Peter (BA'06, MBA'09 Dalhousie) pivoted from coffee roastery dreams when a single class on zero-emissions brewing sparked an obsession with sustainable beer production. Working at Java Blend while perfecting homebrews, he envisioned a nano-brewery that would prove tiny scale could succeed.

Rozina, known affectionately as "the good witch of the North" — raised between her Czech grandfather's flour mill family throwing martini-filled Prague parties and her Tanzanian Gujarati Muslim grandparents celebrating with chai and samosas—shaped her vision of what inclusive brewing could mean. She guides the brewery with one question before every decision: "What are we doing to open the door to more inclusion?" This isn't marketing language. It determines job posting wording, menu development, space design, community partnerships—everything.

Josh Herbin, co-owner and brewer, brought the essential brewing expertise that transformed Peter's homebrewer passion and Rozina's food science knowledge into professional craft beer. Josh works directly with Rozina on recipe development, experimenting with innovative styles like their Twinkle Pony cookie stout featuring toasted coconut, almonds, and vanilla inspired by French macarons.
