Courtney and Brandon Schriver have known each other since they were five years old. They started dating at twelve. By the time they bought their first home together, they had already spent most of their lives building things side by side.

The house came with a kitchen Courtney loved immediately. She started baking, not with any particular purpose, just because the kitchen invited it. Brandon was working as a Red Seal Trailer Mechanic. Courtney was working in emergency veterinary medicine and teaching future veterinary professionals. They were two hardworking people who had always found ways to show up for others. The baking was, at first, just for them.

The patience they have with each other, the shorthand, the ability to build something without constant explanation: all of it comes from two decades of knowing the same person.

Courtney is the one who generates the ideas. She will tell you honestly that this is both the engine of the business and the thing she has to manage most carefully. Too many good ideas at once is its own kind of problem. Learning which one to chase now and which one to sit with has been as much a part of running Bailey & Ollie's as the baking itself.

Brandon holds things steady. A Red Seal certification requires discipline and a standard of precision that does not leave much room for shortcuts. He brings that same attention to what they build together: evenings spent baking, weekends at markets, the unglamorous work that makes the public-facing parts possible.
