Before the espresso steams, before the milk swirls into art, there is a story. A story of two islands left behind, a city that opened its arms, a son born into possibility, and a father who poured his whole heart into something worth building.
Jasper Gayo arrived in Halifax a decade ago carrying something that doesn't fit in a suitcase: a deep love for coffee. Back home in the Philippines, coffee wasn't just a beverage — it was ritual, hospitality, the reason people lingered. Stepping behind the bar of his first Halifax café felt less like a job and more like a homecoming. For years he moved through the city's café world, quietly becoming one of its most skilled baristas, learning to read espresso the way a musician learns to read a room — by instinct, by feel, by the exact moment crema crowns a shot just right.
Karen, meanwhile, was building a steady career in Halifax's financial sector — methodical, organized, the kind of person who could hold a complex operation together without letting a single thread drop. Both transplanted from the same part of the world, they began to wonder if they could build something of their own.
