It began at McGill University, a traditional academic track that ultimately left her feeling misaligned and deeply burnt out. Needing space to breathe and recalibrate, she stepped away from the lecture halls for a brief stint 'finding herself' among the mountains of Whistler, British Columbia, before stretching the distance even further on a working holiday across Australia.
Yet, even after returning to Canada, her true north wasn't immediately obvious. In an unexpected detour to clear her head, Charlotte spent a full year studying automotive technology. It was a rigorous, tactile environment of engines and mechanics that required absolute structural precision—a trait that, unknowingly, perfectly prepared her for the meticulous science of high-end baking. When the exhaust finally cleared, her real passion became undeniable. She stopped compromising and fully committed to her craft, enrolling at the Pacific Institute of Culinary Arts (PICA) in Vancouver to build her foundation as a professional pastry chef.
Today, when the demanding hours catch up to her and the physical toll of running a bakery peaks, Charlotte doesn't look to abstract business metrics to find her second wind. Her drive is fueled entirely by the quiet, personal impact of her work. On the toughest days, she stays anchored by the exact moments her creations inhabit.
