The seeds of something different

In a province wide and wandering,
Where brewers craft in distant towns,
One dreamer saw a gathering place—
A home for beer from all around.
No corporate lines, no mass-produced,
Just hands that work and hearts that care,
He walked the roads to meet them all,
And brought their stories here to share.

The love affair began thousands of miles from home, in the sun-baked Southwest of the United States, where craft beer culture ran deep and wide. Ian, a Halifax native living abroad, found himself captivated by the artistry and community that flourished around small-batch brewing. It wasn't just the beer itself—though that certainly played a part—but the way it brought people together, the conversations it sparked, the way each pour told a story about the hands that made it.

When he and his wife returned to Nova Scotia in 2017, Ian carried that appreciation home with him. A friend needed help at her bar, and he fell back into bartending, remembering why he'd loved the work in the first place. As bar manager at the alt Hotel, he began forming his first connections with local brewers—Garrison, Nine Locks—and something clicked. "That was my first sort of experience with direct contact with brewers and with sales," he recalls. "That's what kind of got me on my journey to discover more about Nova Scotia craft beers."

But it was more than discovery. The more Ian learned about the province's brewing landscape, the more he saw what was missing. Exceptional breweries dotted Nova Scotia from Yarmouth to Cape Breton, from Amherst to the Valley, each crafting unique, beautiful beers. Yet most people would never taste them unless they made the journey themselves. "There wasn't a place like this that existed where one spot brought all of these beers from around the province together," Ian realized. The vision began to take shape: not just another bar, but a celebration, a platform, a gathering place for Nova Scotia's craft beer artists.

Then COVID-19 hit, and Ian's hotel job—dependent on air travel and tourism—ground to a halt. He tried other bartending gigs downtown, but his heart wasn't in it. In September 2020, he sat down with his wife and shared the dream that had been building for months. Her response was simple: "Yep, go for it, all in." By January 1st, 2021, he'd signed the lease. By February, he took possession. And then Ian did something few bar owners would think to do: he hit the road.
